I have another shameful secret to share with you all today.
I don’t eat breakfast.
(Not in the traditional sense, at least.)
I know, I know – breakfast is the most important meal of the day. I get it. But I am just not at all hungry first thing in the morning. Maybe because I’m usually running around like a crazy lady getting the boys and myself ready. Or maybe it’s because I fill up on my very necessary cup of coffee first thing in the morning. Whatever it is, I don’t typically eat a good breakfast.
I do get hungry around 10ish – and usually have a quick energy/granola/health bar then. This keeps me satisfied until lunch.
But I’m kind of getting tired of the available bar choices; plus there are always ingredients that I don’t recognize.
So when I saw these little guys on Pinterest (yes, I know, I’m thoroughly addicted and I admit it), I was excited to give them a try.
No-Bake Energy Bites, slightly adapted from Smashed Peas and Carrots
1 c oatmeal
1/2 c peanut butter (or other nut butter)
1/3 c honey
1 c shredded coconut
1/2 c ground flaxseed
1/2 c dark or semi-sweet chocolate chips
1 t vanilla
Mix everything above in a medium bowl until thoroughly incorporated. Let chill in the refrigerator for half an hour. Once chilled, roll into balls and enjoy! Store in an airtight container and keep refrigerated for up to 1 week. Makes about 18, depending on size.
Each and every one of the ingredients looked perfect for me – except for the flax-seed. Now, I honestly don’t think I’d ever had flax-seed before, so I was excited to buy some and try it out. I couldn’t find any pre-ground at the store, so I bought the full seeds with the intention of grounding them up at home.
Well, the minute I opened the bag, I could smell the flax seeds. And the smell was not appetizing to me at all. I quickly ground them up (while trying not to breathe through my nose), and added them to my mix; hoping against hope that the other flavors would overpower the flax.
After mixing everything up, chilling the mix in the fridge, and forming the round bites, I gave in and took a bite.
It wasn’t my favorite, I admit – mostly because I could taste the flax. But, I realized after a couple bites, the taste began to grow on me. Once into my second ‘bite’ I realized I liked them. I know that’s not the most positive recommendation I’ve ever given, but it gets better.
My oldest son was very interested in what I was eating, so I gave him one to try. And he loved it. (As in, wants-it-for-dessert-every-day loved it.) He had three before I could stop him.
My youngest son was interested in what his brother was eating – so I gave him one to try. And guess what, he loved them, too.
And, finally, my husband thought they were fantastic, as well.
So maybe it’s my taste-buds that were a little off at first. (Though I’d hate to admit that.)
Either way, I will be making these quite a bit, I’m sure.
They’re pretty good for you and a great healthier treat for the kiddos.
And a quick and easy breakfast snack for me.
